​Looking to replicate Starbucks' Potato Cheddar & Chive Bakes? I think I nailed it .. or created something better!

After consuming quite a few of these bakes, reviewing Starbucks' list of ingredients, trying several copy cat recipes on-line & then blending the recipes; removing & adding ingredients -- I've come up with a variation of this tasty treat that I'm really pleased to share with you.

​Red Potato Cheddar Chive Breakfast Bites
What you need:

1 cup diced small red potatoes (unpeeled)
1/2 cup diced yellow onion
2 tbsp olive oil
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp paprika
3 large eggs
1/2 cup cream
1 1/2 cup shredded sharp cheddar cheese
2 handfuls chopped spinach
2 tbsp fresh chopped chives*

* chives are so easy to grow! if you have no garden, you can grow them in a pot

What you do:

Preheat over to 350°.
Lightly boil about 2 dozen small red potatoes. Remove & drain while still firm. While the potatoes are boiling, finely chop about 1/2 cup yellow onion. Dice the potatoes into quarters or eighths and mix with onions. Heat about 2 tablespoons of olive oil in a pan, add potatoes & onions and sautee. Prepare a muffin tin with a little olive oil in each cup; spread to lightly coat the sides. Heat pan in oven. Continue turning the potatoes & onions and sprinkle with sea salt, pepper and paprika. Remove when potatoes are lightly browned. Drain on paper towel. In a separate bowl, beat together eggs, cream and shredded cheese. Add in the finely chopped spinach and chives. Finally add the drained potatoes & onion mix and lightly combine. Remove the muffin pan from the oven & fill each cup to 1/2 full. Bake for about 12-15 minutes. They are done when they spring back lightly on the top. Drain on a paper towel lined rack. Great for breakfast, lunch, dinner or snacks!
